Our Trans fat data for generic meat in the database comes mostly from the USDA database and is pretty hit and miss. I would use this data (if it is even available for the items you need) as a general ballpark for recipe planning. For labeling, I would recommend sending out the Trans fat value for chemical analysis. If you target recipe ingredients that may have Trans fat (such as the beef), then you could enter the values into Genesis to use in creating recipe formulations.
