Q. How is ash reported in the database?
A. Ash is reported for some ingredients in the ESHA database. If we receive the data from the supplier or if we can calculate it by subtraction from data given, Ash data is included in the ingredient record. Viewing the Ingredient record and the Nutrients section will indicate a value for Ash. A dash indicates that Ash was not provided or calculated.
For new ingredients, the user can add Ash data provided by suppliers, or calculate Ash if the supplier provides data for all other proximates: Fat, Protein, Carbs, Water (moisture) and Alcohol.
Most foods have less than 5% of the product weight as ash, however dry mixes, like dry soup or gravy mix, can have a higher ash percentage.
